Whether you have a peanut allergy or whether you just want to live a healthier lifestyle, natural nut butters can be a nice alternative. But buying them in the health food store can be a bit pricey. Not to worry. All it takes is a food processor and a little time to make your own nut butters right in your own kitchen.
The simple ingredients to make the nut butter are a couple of cups of the desired nuts and a little bit of olive oil. You can add other ingredients to flavor the nut butters, such as a tablespoon of honey or coconut oil, or maybe salt. It’s a matter of taste preference.
For most nut butters, you’ll want to roast the nuts first. Follow these simple steps to make your own nut butter. Keep in mind these steps will vary slightly depending on the type of nuts you’re using.
Pre-heat your oven to 350 degrees. Cover a cookie sheet with the (shelled) nuts of your choice. Ideally you’ll want to roast them so that the nuts will be crispy. Or you want to soak them for 12-24 hours and then dehydrate them. Doing this will remove the phytate content. Phytates have a tendency to strain the digestive system and pull nutrients from the body.
Put the cookie sheet in the oven and set your timer for eight minutes. This is about the correct amount of time for peanuts and almonds. But times will vary for different types of nuts.
When the time is up pull them out of the oven and stir. Put them back in for another 8-12 minutes. Generally 18-20 minutes overall is a good time but keep a watch on the color of the nuts as well as the smell.
When the nuts have cooled, place about 4 to 6 ounces of nuts into the food processor and turn the processor on to medium speed. At first you’ll have nothing but nut dust, but the nuts will get chopped up and become finer and finer. You will likely have to scrape the sides of the food processor several times with a rubber spatula.
